This has to be one of my all time favorite breakfast foods. I remember being a young girl on summer vacation and my mom making these for me. This are traditional polish crepes called Nalesniki. They are basically just like your average crepes but with some minor differences.
They can be savory or sweet, I always have mine sweet. You can fill them with whatever your heart desires. I usually go for some fruit perseveres, or fresh fruit. My mom likes them with sweet cheese and honey. You can even make your own fruit “sauce” where in a sauce pan you combine your fruit e.g. strawberries, raspberries etc and sugar until it forms a sauce.
For now I used raspberry preserves, I hope you enjoy!!
Ingredients
1/2 cup all-purpose flour
1/2 cup milk
1/4 cup lukewarm water
2 large eggs
2 tablespoons butter, melted
1 1/2 tablespoons sugar
Pinch salt
Raspberry Preserves (whatever preserves you enjoy best)
Get Cooking
In a hand mixer, combine all ingredients until smooth. Transfer to a pitcher, cover with plastic wrap and let rest for 30 minutes so the liquid can be absorbed by the flour.
Using a 2-ounce ladle, portion out batter into a nonstick crepe pan or small skillet that has been lightly coated with butter. Rotate pan and swirl batter until it covers the entire bottom of the pan. Cook until lightly brown or spotted brown on the underside. Turn and cook the second side until light brown.
Place on waxed paper and repeat with remaining batter and butter. Serve immediately
Lay crepe out flat and spread a nice amount of preserves and roll it up!
You can add some powdered sugar on top for a nice touch.
